- Prepare 1/2 tsp of bicarbonate of soda.

- It's 1 medium of egg.
- It's 4 tbsp of golden syrup.

- sift flour, ginger and bicarbonate into a bowl, add sugar and mix.
- rub in butter until mix resembles breadcrumbs.
- add egg and syrup then mix to form a dough.
- roll out on a floured surface to 1cm deep and cut with cookie cutters or a tumbler.
- place on greased baking sheet and refrigerate for 1 hour.
