Gradually add the Condensed Milk & Rum. If the mixer begins to labour, stop and swap paddle attachment out for a dough hook. Continue to mix until all ingredients are well combined. By Hand: Dry ingredients in large bowl & add the Condensed Milk & Rum. Start the mix with a wooden spoon & swap out for hand mixing once difficult..
  4. Set up a storage container - adding a thin layer of Coconut in the bottom. Set up a shallow dish with approx. half the coconut in the bottom..
  5. Start rolling balls of the wet mixed ingredients approx. the diameter 20c pieces - placing them in the shallow coconut dish once formed. After 5-10 accumulate in the coconut, switch to rolling these through the coconut until an even coating has been achieved on the outside of the balls. Remove to storage container, whole leaving excess coconut in the rolling dish. Repeat until all wet mixture has been consumed... Use as much coconut as required..
