- Using a food processor, bring the biscuits to a course/grainy consistency. Don't make them too fine as the graininess provides texture to the final product. Ensure all larger biscuit pieces have been processed to an even texture..

Gradually add the Condensed Milk & Rum. If the mixer begins to labour, stop and swap paddle attachment out for a dough hook. Continue to mix until all ingredients are well combined. - Start rolling balls of the wet mixed ingredients approx. the diameter 20c pieces - placing them in the shallow coconut dish once formed. After 5-10 accumulate in the coconut, switch to rolling these through the coconut until an even coating has been achieved on the outside of the balls.
