- You need 5 medium of parsnips.
- It's 1 of foil of 3 way mince.
- You need 3 large of mushrooms, diced.
- You need 1 of half yellow pepper.
- It's 1 of tin chopped Tomatoes.
- You need 1 tsp of Ras Al Hanout spice mix.
- You need 2 tbsp of sultanas.
- It's 1 of thickening of choice.
Moroccan Hotpot instructions
- Thinly slice parsnips and gently fry..
- When parsips have taken colour, put aside..
- Gently fry mushrooms and pepper.
- Add 3 way mince mix and tin of tomatoes.
- Add water as needed.
- Add spice mix to taste..
- Add sultanas.
- Add thickener.
- Simmer for 10 mins, stirring occasionally.
- Pour in oven dish.
- Allow to cool then arrange parsnips on top.
- Bake in oven on 200c for 40 mins or until parsnips are golden..
- Serve with crusty bread and green veg of choice..
