- Add oil to large pan and sauté onion if using and or asafoetida.
- Add all peels and sauté until soft, keep stirring around to get oil on..

- Add stock from step 4 & milk to peels with salt and pepper.
- Bring to the boil then reduce the heat and simmer for approximately 10 minutes until peels are tender and soft..
- Cool the soup the puree with a stick blender then stir in the parsley, add coriander or own spices now to taste.
