  1. Steps for preparing crust:-.
  2. Grease 8"inch cheese cake mold with butter,place on a cake board and keep aside..
  3. Place chocolate biscuits in a mixer- grinder and process till they resemble coarse crumbs..
  4. Transfer biscuit crumbs to a mixing bowl,add melted butter and mix well..
  5. Transfer the prepared mixture to the cheesecake pan and spread well. Press and make the crust smooth..
  6. Place the pan in fridge to chill for atleast 30 minutes.Meanwhile we prepare the next layer for cheese cake..
  7. Steps for preparing cheese cake filling:-.
  8. In a bowl add chilled cream cheese and whisk well until smooth..
  9. In another bowl add whipping cream, icing sugar(I added only 1 tbsp sugar,use sugar as per your taste) and whip until stiff peaks are formed..
  10. Transfer whipped cream to cream cheese bowl,add vanilla essence and mix very well.The mixture is very smooth..
  11. Now add melon puree to the cream cheese mixture and mix well..
  12. Take a small bowl add 3 tbsp of water and mix 11/2 tbsp of agar agar powder to it..
  13. In another bowl add hot water and place the agar agar mixture bowl in it, whisk until agar agar is fully dissolved..
  14. Once the agar agar is completely dissolved and the mixture looks gelatinous..
  15. Add agar agar liquid to the prepared melon cream cheese mixture and whisk well immedietly..
  16. Pour the prepared cheese melon mixture over the prepared crust, level with a spoon and chill in the refrigerator for about an hour.Allow the cheesecake to set for an hour or so before spreading the glaze over it..

  18. Take a small pan add 2tbsp of water and mix 1tbsp of agar agar powder to it..
  19. In another bowl add hot water and place the agar agar mixture bowl in it,whisk until agar agar is fully dissolved..
  20. Once the agar agar is completely dissolved and the mixture looks gelatinous..
  21. Add mixture to 1 cup melon puree and mix well..
  22. Transfer mixture to a small pan, turn on the heat to medium and bring the mixture to boil.When it begins to boil, reduce the flame to low and cook for 3- 4 minutes..
  23. Remove the pan from the heat,allow glaze to cool down..
  24. Pour this glaze over the set melon cream cheese layer carefully and spread with a spoon..
  25. Allow the glaze to set over the cheesecake for 2 to 3 hours or overnight, before slicing it..
  26. Gently and carefully remove the cake from the mold.Arrange thin slices of kiwi on the sides of cake,garnish with dry rose buds.Slice and serve the chillled melon cheesecake.(Any fruit of your choice can be used for garnish).
