Khichdi is a simple, classic Indian dish made with rice and yellow mung lentils. It is actually a very healthy recipe — so much so that in India, when someone is ill or recovering from illness, Dalia and moong dal khichdi are often served. Khichdi is a lovely comfort food often served for breakfast, but I find it makes a wonderful side dish with a curry or salad, or a light main dish. You can cook Khichdi using 16 ingredients and 11 steps. Here is how you achieve that.
Ingredients of Khichdi
- You need 1 cup of rice.
- Prepare 1/2 cup of toor dal.
- It's 4.5 cups of water.
- You need 1.5 tsp of salt.
- It's 1 tsp of coriander powder.
- Prepare 1/2 tsp of cumin powder.
- Prepare 1/2 tsp of haldi.
- It's 1/2 tsp of chilli powder (optional).
- You need 1 tablespoon of ghee.
- You need 1 tsp of Rai.
- It's 1/2 tsp of cumin.
- It's 1 pinch of hing.
- It's 1 tsp of urad dal (optional).
- Prepare 5-6 of curry leaves.
- You need 1 of red dried chilli.
- It's 1 tablespoon of ghee.
I have eaten khichdis prepared by Indian friends that were like porridge, with the mung beans and rice indistinguishable because it was cooked until almost smooth. Khichdi or khichri is an Indian one pot lentil and rice dish that's vegetarian, easy to digest and wholesome. Done right, it can be incredibly tasty and may become your favourite comfort food. This version can be made in a traditional pressure cooker or an Instant Pot.
Khichdi instructions
- Add rice and dal to the IP liner and wash well..
- Once the rice and dal are washed, rinse excess water and add all the spices and ghee and mixed. Add water, mix and close IP..
- Set vent to sealing and cook on high pressure for 8 minutes.
- Quick release after 5 minutes NPR.
- Once the NPR starts, start the tarka on the side..
- Add oil/ghee/butter as per your liking and Hing, rai and cumin seeds.
- Once the cumin browns a bit add urad dal and wait for it to become light brown.
- Add curry leaves and dried chilli and mix well..
- Once the chilli has blackened slightly switch off the gas and add it on top of the khichdi in the instant pot..
- Mix with a fork just like you are fluffing rice.
- Can add fresh coriander and some more ghee to finish..
