My mom prepares the diamond biscuits using atta / wheat flour. She usually won't use maida in her cooking, as Maida doesn't have dietary fibres. Roll one of the balls just like chapati neither too thin nor thick. Using biscuit roller/cutter or pizza cutter or knife cut the rolled chapati horizontally first, then vertically to make diamond shaped maida biscuits. Take flour, salt, ghee in a bowl and rub with your fingers till it resembles a coarse crumb.
