Kimchi Pancakes. I've said many times on this blog that ripe, well-fermented kimchi is always the best to cook with. No exception for this kimchi pancake recipe! Napa cabbage kimchi is standard for kimchi pancakes, but you can also use radish kimchi (kkakdugi or chonggak kimchi).
It's hot, spicy, crispy, a little sweet, sour, and a little salty. It is not only a great snack but also it goes well with rice as a side dish, and is great in lunchboxes in place of plain kimchi. The basic batter is made with flour, eggs, finely chopped kimchi and water. You can cook Kimchi Pancakes using 9 ingredients and 3 steps. Here is how you achieve that.
Ingredients of Kimchi Pancakes
- Prepare 2 1/2 Cups of All Purpose Flour.
- You need 2 1/2 Cups of Water.
- Prepare 1 tsp of Salt.
- You need 1 of Egg (Beaten).
- You need 1 1/2-2 Cups of Kimchi.
- It's 1 Tbsp of Kimchi Liquid.
- It's 1 of Red Chili (Sliced).
- It's 1/4 Cup of Green Onions (Sliced).
- You need of Vegetable Oil for Frying.
Other variations may also mix in cilantro, diced green onion or chili peppers. Turn over the pancakes with the help of a spatula or a plate. Serve the pancakes with a soy sauce or a spicy dipping sauce. Stir together the kimchi, kimchi juice, flour, eggs, and green onion in a bowl.

- Sift Flour and Salt into a Large Mixing Bowl. Add the Water, and whisk well. Add the Kimchi, Kimchi Liquid, Egg, Red Chili, Green Onions. Stir well. Place mixing bowl in another bowl of ice, or add a few ice cubes to the batter to keep it cold..
- Heat a medium sized skillet over Medium Heat. Add a decent amount of Vegetable oil and spread it evenly in the pan. Once heated, ladle about 2 ladles full of batter into the pan and spread evenly. The pancake should be about 10" diameter. You can make smaller pancakes, if desired. Cook until the pancake is about 2/3 of the way cooked, then flip. Cook until other side is done.
