- You need 40 g of Nutcessity Gingerbread Cashew, Brazil & Coconut Butter.
- You need 50 g of Coconut oil.
- You need 40 g of Syrup (Maple / Agave / whatever you have).
- You need 150 g of Nuts / Seeds (I used Poppy & Pumpkin).
- You need 250 g of Jumbo oats.
- Prepare 100 g of Grains (quinoa / millet / buckwheat...).
- Prepare of Extra spices (Nutmeg / Ginger / Cinnamon) (if you're feeling spicaaay)..
It's whole grain, naturally sweetened, gluten free and vegan too. In a large bowl, combine oats and pecans. Pour molasses mixture over the oat and nut mixture and, using a large spoon or spatula, stir well to evenly coat everything. Gingerbread Granola is perfectly delicious plain, but it is even better when you add sweet, dried cranberries, salty green pistachios, and creamy white chocolate chips.

- Melt the nut butter, syrup and oil over a low heat until liquid..
- Add the dry ingredients to a large baking tray..
- Pour over the liquid and mix well with a spatula to combine..
- Bake for around 40 minutes, turning halfway....
- Eat! Out the jar / with your favourite milk / yoghurt / sprinkled over baked fruit....
